Step 10: Stir the remaining flour into the leek mixture, then gradually add the milk, followed by the mustard. Allow it to simmer for about 5 minutes, or until it turns thick and creamy. Slice the sausages into 1cm thickness and stir them into the leek mixture. Spoon this sausage and leek blend evenly into the mash-lined dish, and then cover the top with the remaining mash.

Step 11: Place the dish at the bottom of your oven and bake for approximately 40 minutes or until it turns a beautiful golden color. In the last 5 minutes, sprinkle the remaining thyme leaves on top for that extra burst of flavor.
